Food-grade xanthan gum is produced under FCC / USP specifications with strict heavy-metal, microbiological and allergen control. Oilfield grade is optimised for rapid hydration in brine and high-salinity water, complying with API 13A for use in drilling mud. The two grades are not interchangeable: oilfield grade is not certified for food contact.
