Potassium Alginate

Potassium alginate is the potassium salt of alginic acid, a linear polysaccharide extracted from brown seaweed, and is identified in food additive systems as E402. Like the other soluble alginate salts it hydrates in water to give a viscous solution and forms a gel in the presence of calcium ions. It is chosen over the sodium salt where the sodium contribution of a formulation matters or where the potassium counter-ion suits the rest of the system.
