Gellan gum forms a network in water in the presence of ions. Low acyl gellan produces firm, brittle, clear gels; high acyl gellan produces soft, elastic gels and a fluid gel structure capable of suspending particles in a beverage that still pours like a liquid.
High acyl or low acyl decides the outcome+
Suspension of cocoa or minerals in a drinkable beverage is a high acyl application; a firm, cuttable, transparent gel is a low acyl application. Ordering the wrong type produces either a set beverage or a settled one, so the type must be confirmed before quotation.
Ion content of your water matters+
Gellan hydration and gel strength depend on calcium and other ions present in the formulation and in the process water. Share your water profile and mineral additions so the supplier can advise on type and dosage.
