Functional role of tetrasodium pyrophosphate (tspp)+

TSPP is strongly alkaline in solution and sequesters calcium and magnesium. In protein systems it dissociates actomyosin and supports water binding; in dispersions it prevents mineral-driven thickening and keeps particles suspended.

Alkaline pyrophosphate, not an acid leavener+

TSPP and SAPP are both pyrophosphates but sit on opposite sides of the pH scale. TSPP raises pH and works on protein and mineral interactions; SAPP is an acid used to release carbon dioxide from bicarbonate. Ordering one when the formulation requires the other is a chemical error, not a grade substitution.

Solubility limits how it is dosed+

TSPP is less soluble in cold water than STPP, which affects how it is introduced into cold brines and slurries. Where a blend is used, dissolution order matters. Describe your make-up procedure so a workable granulation and blend approach can be discussed with the supplier.

Can TSPP replace STPP in a brine?+

Not directly. They differ in pH, solubility and function and are usually combined rather than substituted. State your current system and the appropriate product will be quoted.

Is a blend or a single salt better?+

Most protein processors use a blend tuned to their product. If you currently buy a blend, share its function and the supplier options and documentation will be requested.
