Functional role of sodium tripolyphosphate (stpp)+
STPP raises pH away from the isoelectric point of muscle protein and sequesters divalent metal ions, which allows myofibrillar protein to swell and hold added water. The practical result in processing is improved brine uptake, cook yield and sliced texture.
STPP is not interchangeable with other phosphates+
Sodium tripolyphosphate, sodium acid pyrophosphate and tetrasodium pyrophosphate are chemically distinct salts with different pH behaviour, solubility and function. They are frequently used together in blends, but substituting one for another at the same dosage changes both pH and performance. Specify the salt your formulation actually calls for.
Granulation drives dissolution+
Coarse granular STPP dissolves more slowly than fine powder and behaves differently in cold brine make-up. Undissolved phosphate in an injection brine causes filter and needle problems, so state your brine temperature and mixing time and the appropriate granulation will be requested.
