What Specialty Hop Extracts (Iso-Alpha Acids) is and what it does+

Specialty hop extracts are CO2 or ethanol extracts of Humulus lupulus, supplied either as unisomerised alpha-acid extract or as pre-isomerised iso-alpha-acid, rho-, tetra- and hexa-hydro-iso-alpha-acid preparations. They deliver bitterness and foam behaviour without hop vegetal matter, and each derivative behaves differently in light stability and head retention.

Isomerised and unisomerised extracts are not interchangeable+

Unisomerised alpha-acid extract must be boiled to develop bitterness; pre-isomerised extracts are dosed post-fermentation with far higher utilisation. Choosing the wrong one moves the bitterness result by a wide margin at the same declared alpha percentage.

Reduced derivatives are chosen for light stability, not flavour+

Rho, tetra and hexa derivatives resist the light-struck reaction and change foam and bitterness quality in different directions. Specify the derivative your sensory trial used rather than accepting a generic iso-alpha offer.

Alpha-acid percentage is the commercial basis+

Hop extracts are traded on declared alpha-acid or iso-alpha-acid content, and crop year moves that content. Quote and compare on the acid basis and the analysis method, not on kilograms of extract.
