Dextrose is a single glucose unit in crystalline form. It is directly fermentable by yeast and by meat-curing cultures, dissolves with a cooling effect, browns readily in baked and cooked systems and carries roughly three-quarters the sweetness of sucrose at equal weight.
Crystalline dextrose is not glucose syrup+
Dextrose monohydrate is a dry crystalline sugar; glucose syrup is a liquid mixture of glucose, maltose and higher saccharides. They are not interchangeable on a weight basis and behave differently in browning, water activity and crystallisation. Enquiries should state which of the two the formulation actually requires.
Monohydrate and anhydrous forms+
