Beetroot red is a betalain colour obtained from red beet, standardised on betanin content. It gives a bluish-red shade in low-heat, mildly acidic systems.

Betanin degrades quickly above roughly 60 to 70 °C, shifting the shade from red towards brown. It belongs in cold or short-heat applications; a retort or baking process will not hold the colour.
