Citric Acid Anhydrous vs Monohydrate — How to Specify and Buy Industrial Citric Acid in Canada

Buy citric acid anhydrous when the finished product is dry — powdered drink mixes, effervescent tablets, dry cleaning powders, seasoning blends — because it carries no water of crystallisation and will not cake or trigger premature reaction in the blend. Buy citric acid monohydrate when the process is wet — soft drinks, syrups, jams, liquid detergents, CIP descaling solutions — because the 8.5% bound water is irrelevant once dissolved and the monohydrate is normally the cheaper landed cost per kg of delivered acidity.

On a like-for-like basis, 1 kg of anhydrous replaces roughly 1.09 kg of monohydrate. Compare quotations on cost per kg of anhydrous-equivalent acid, not on headline price per bag, or you will overpay by about 9% without noticing.

The specification a supplier needs before quoting

A citric acid RFQ that omits any of these will bounce back for clarification and cost you a week:

  1. Form — anhydrous or monohydrate (state it; "citric acid" alone is not a specification)
  2. Particle size — fine powder, 30–100 mesh, or 8–40 mesh granular
  3. Standard to be certified against — FCC, USP, BP, EP, or technical grade
  4. Certificates required — kosher (OU / Star-K), halal, non-GMO, allergen-free statement
  5. End use — food contact, cleaning, water treatment or metal finishing (this drives which mill is acceptable)
  6. Annual volume in MT and call-off pattern
  7. Packaging — 25 kg bags, 1,000 kg big bags, or full container load
  8. Delivery point — Ontario, Quebec, Western Canada, or FOB port

Where citric acid is the wrong material

Do not specify citric acid if the job needs to dissolve heavy mineral scale fast, strip rust, or work below pH 1.5. Citric is a weak, tri-functional organic acid (pKa 3.13 / 4.76 / 6.40). For heavy boiler scale, sulfamic or inhibited hydrochloric acid is the correct choice; for strong alkaline neutralisation at scale, sulfuric acid is cheaper per equivalent. Citric acid earns its place where food-contact status, biodegradability, low corrosivity to stainless steel and chelation of calcium and magnesium matter more than raw acid strength.

If you need CO₂ generation in an effervescent or leavening system, citric acid is only half the pair — the other half is sodium bicarbonate, and the two must be specified together with matched particle size, otherwise the blend segregates in the drum.

Canadian buying reality

Almost all industrial citric acid consumed in Canada is imported — the major producing origins are China, and to a smaller extent the EU and Brazil. That has three practical consequences for an Ontario or Quebec buyer:

  • Documentation, not price, is the usual failure point. A CFIA-registered facility needs the mill COA, FCC/USP compliance letter, kosher and halal certificates, non-GMO declaration and allergen statement in the same package. Ask for the full set at quotation stage, not at delivery.
  • Landed cost is freight-sensitive. Below roughly one pallet, warehouse pricing wins; above roughly 8–10 MT, an FCL direct from origin is normally cheaper even after duty, brokerage and drayage from the port.
  • Lot-to-lot consistency matters more than the last cent. Switching mills mid-year changes trace metals and bulk density, which shows up in your filler and dosing equipment before it shows up in the lab.
