Dairy protein and stabiliser salt selection

Dairy protein forms differ in far more than protein percentage — casein-to-whey character, lactose, minerals, fat and heat behaviour all move together. Stabiliser salts are a second, separate decision about the mineral environment, not a fix applied to a protein choice. Enter through the decision you actually have.
