Dairy powder solubility, sedimentation and heat-stability troubleshooting
Wettability, dispersibility, solubility and sedimentation are four different failures that look similar in a tank. A powder that will not wet out is not automatically insoluble, and a system that sediments has not necessarily failed to dissolve. Start from the symptom you can observe, work the reversible process checks before touching the formulation, and treat every branch as a candidate to investigate rather than a diagnosis of your plant.

Wettability, dispersibility, solubility and sedimentation are four different failures. Choosing the right one changes the whole cause list.

Use this when
- Powder floats, clumps or takes far longer than usual to wet out and disperse.
- The reconstituted system still contains visible particles or leaves residue on a filter or sieve.
- Sediment appears in the tank, the pipework or the finished pack.
- The product is perceived as gritty or sandy in the mouth.
- Viscosity rises or the system gels during or after a heat step, and you need to know which variables are even relevant.
- Reconstitution behaves differently batch to batch with no recipe change.
How this works
- 1. Name the symptom precisely — wetting, dispersion, dissolution, sediment, sandiness or heat-related thickening. They are not synonyms and they do not share a cause list.
- 2. Check the reversible variables first: water temperature, shear, order of addition, addition rate, holding time and solids concentration.
- 3. Then check material history: powder age, storage temperature and humidity, heat class of the grade and lot-to-lot specification differences.
- 4. Only then consider the mineral and pH environment, and any stabiliser-salt discussion.
- 5. Change one variable per trial, keep an unchanged control, and record the result.

What this page does not determine
- It does not identify a single certain cause. Reconstitution and stability failures are multi-factor, and one symptom rarely has one owner.
- It does not predict heat stability. It publishes no heat-stability time, no UHT, retort or sterilisation outcome, no guarantee that gelation will not occur, and no statement about the safety or stability of a finished product.

- It makes no shelf-life, freshness or microbiological safety statement. Physical instability is not spoilage, and only the first one is in scope here.
- It makes no health, nutrition, digestibility, infant-nutrition, medical-nutrition or allergen claim, and it draws no labelling or regulatory conclusion.
- It does not design or correct a dairy formulation, and it does not analyse your water, your powder or your process remotely.
- Confirm any change on a controlled bench or pilot trial against your own control batch, and against your own verified specifications, before it reaches a production run.
