What Pullulan is and what it does+

Pullulan is a fermentation-derived polysaccharide from Aureobasidium pullulans that forms clear, low-oxygen-permeability films. It is used for capsule shells, edible films and coatings rather than as a viscosity builder.

Film former, not a thickener+

Pullulan solutions stay low in viscosity at concentrations where other hydrocolloids gel, which is exactly why it casts clear films. Specifying it as a gum replacement for texture will not deliver the viscosity expected.

Hygroscopic films+

Pullulan films absorb moisture and soften at high relative humidity, which shows up as tacky capsules or strips. Confirm packaging and storage humidity before committing to the format.

Molecular-weight grade drives film behaviour+

Grades differ in molecular weight and therefore in film strength and dissolution rate. State the intended film thickness and dissolution target so the correct grade is quoted.
