What Transglutaminase is and what it does+

Transglutaminase catalyses cross-linking between protein-bound glutamine and lysine residues, forming covalent bonds between protein chains. It is used to restructure meat and fish pieces and to firm protein gels.

Reaction is time and temperature dependent+

Cross-linking proceeds during a holding step; too short a hold gives weak bonds and too long can over-firm the product. Establish the hold condition on your own line rather than transferring a dosage from another plant.
