Functional role of powdered cellulose+
Powdered cellulose is mechanically processed cellulose that does not dissolve or gel. It contributes insoluble dietary fibre, binds free water, adds bulk without contributing digestible carbohydrate, and physically separates particles in shredded and grated products.
Fibre length decides the behaviour+
Short-fibre grades disperse smoothly and are chosen where mouthfeel must not change; long-fibre grades hold more water and give better particle separation. Selecting on price alone, without matching fibre length, is the usual cause of texture complaints.
Powdered cellulose is not microcrystalline cellulose+
Both are cellulose, but MCC is acid-hydrolysed to a colloidal, functional particle used for suspension and compression, while powdered cellulose remains a fibrous bulking material. They are quoted as separate products and should not be substituted for each other.
