Phospholipase — Food Grade

Phospholipases hydrolyse phospholipids to lysophospholipids, which are more surface-active than the parent molecules. In baking this generates in-situ emulsifier; in oil refining it is used for degumming.

Oil degumming performance depends on temperature, water dosage, mixing and residence time, and drifting outside the window leaves phosphorus above target. Fix the process parameters with the enzyme supplier before scale-up.

Enzyme preparations are sold on declared activity in the producer's own unit system, on a standardised carrier. Two offers at the same price per kilogram can differ several-fold in delivered activity, so compare on activity per kilogram and confirm the assay method used.

Enzyme activity declines with temperature and moisture exposure during storage. Confirm the storage condition, the declared shelf life and the activity at the point of delivery rather than at production.
