What Nisin is and what it does+
Nisin is a bacteriocin produced by Lactococcus lactis, supplied as a standardised preparation on a salt or milk-solids carrier and declared in international units per gram. It acts against Gram-positive bacteria including spore-formers.
Gram-positive only — it is not a broad-spectrum preservative+
Nisin does not control Gram-negative bacteria, yeasts or moulds. Where the spoilage organism is Gram-negative or fungal, nisin alone will not solve the problem and a hurdle combination has to be designed around the actual microbiology.
Declared IU per gram, not percentage+
Commercial nisin is a dilute preparation on a carrier; the meaningful figure is international units per gram. Compare offers on IU delivered per kilogram of finished product, and confirm the carrier since it enters the ingredient declaration.
Storage and activity loss+
