Functional role of citrus fibre+
Citrus fibre is a functionalised plant fibre with a large surface area that binds water and oil and stabilises emulsions once it has been properly opened by shear. It is normally selected where a formulator wants texture and stability declared as a fruit fibre rather than as an added hydrocolloid.
Shear activation is not optional+
Citrus fibre only delivers its water-binding and emulsifying performance once the fibre network has been opened by high shear. Plants that dose it into a low-shear mixer and judge the result usually conclude the ingredient does not work, when in fact it was never activated.
Colour and flavour contribution+
Grades differ in residual colour and citrus note. Where the finished product is pale or delicately flavoured, request the grade selected for neutrality and evaluate it in your own matrix before committing to a volume.
