Ascorbyl Palmitate — Food Grade Antioxidant

Ascorbyl palmitate is a fat-soluble ester of ascorbic acid and palmitic acid used as an oil-phase antioxidant. Because it is oil dispersible rather than water soluble, it protects the lipid phase where ascorbic acid cannot reach, and it is frequently used alongside tocopherols, which it can regenerate.

Ascorbyl palmitate is most effective as part of an antioxidant system, typically regenerating tocopherol and often combined with a metal chelator. Used alone at the same dosage as a tocopherol concentrate it can under-deliver, so evaluate the whole system against the target shelf life rather than swapping one antioxidant for another.

The powder disperses in the oil phase but has limited solubility, and under-dispersed material gives inconsistent protection and visible specks. Confirm the addition temperature, the mixing step and the particle size that your process can actually disperse.

Frying and high-temperature processing degrade the ester, and trace iron or copper in the system will consume antioxidant capacity. Describe the process temperature, the equipment metallurgy and the packaging so the antioxidant strategy is matched to the actual stress the product sees.
