Sucralose is a chlorinated sucrose derivative roughly 600 times sweeter than sugar. It is highly water-soluble, stable across a wide pH range and stable to normal food processing temperatures.

Very high potency demands accurate dispersion+

At 600 times sucrose sweetness, weighing error and poor dispersion produce sweet and flat pockets in the same batch. Use a premix or carrier system rather than dosing neat powder into large batches.

High-temperature processing needs assessment+

Sucralose is stable in normal use, but prolonged very high temperature processing in low-moisture systems warrants its own stability check. Validate in the actual process rather than relying on a generic stability statement.
