What Protective Cultures is and what it does+

Protective cultures are food-grade live cultures selected to suppress spoilage yeasts, moulds and Listeria through competition and metabolite production, used as a clean-label alternative to added chemical preservatives.

They control spoilage, they do not correct hygiene+

Protective cultures extend a shelf life that a controlled process already delivers; they cannot compensate for high initial contamination or a broken cold chain. Establish the baseline microbiology before attributing shelf-life gains to the culture.

Sensory impact must be trialled+

Active cultures continue to metabolise in the product and can shift acidity and flavour through shelf life. Trial to end of life with sensory evaluation, not only with microbiological counts.

CFU count, strain identity and overage+

Live cultures are specified by strain designation and by colony-forming units per gram at a stated date. Producers add overage to cover decline through shelf life, so the CFU at production, the CFU at end of shelf life and the storage condition must all be stated on the offer.
