What Monellin is and what it does+

Monellin is a sweet-tasting protein originally from the serendipity berry, now produced by fermentation. It is intensely sweet on a weight basis with a slow onset and lingering finish.

Heat and acid denature it+

As a protein, monellin loses sweetness when denatured by pasteurisation, retort or low-pH storage. It suits cold, near-neutral systems; a hot-fill beverage will lose the sweetness during processing.
