Lemon Essential Oil — Food Grade

Lemon essential oil is cold pressed from the peel of Citrus limon. Its bright top note comes from a small aldehyde fraction, principally citral, carried in a largely limonene base, which makes the oil both highly recognisable and unusually sensitive to oxidation and light.

Citral degrades on exposure to light, heat, oxygen and low pH, producing off notes in beverages long before any gross specification failure. Where the finished product is acidic or clear-packed, discuss the packaging, storage and rotation plan as part of the sourcing decision, not after a complaint.

Distilled and folded lemon oils are used where solubility, stability or flavour strength matter more than an exact cold-pressed character. They are not drop-in replacements for a cold pressed oil in an approved formulation.

Material sold as Lemon Essential Oil varies with the Citrus limon crop, the growing region, the season and whether it is distilled, cold pressed, folded, terpeneless or reconstituted. Two lots meeting the same broad description can smell measurably different, so evaluate against your own retained standard rather than against a description.

The commercially meaningful comparison is the gas chromatography profile of the key constituents, together with optical rotation, refractive index and specific gravity. Ask for the profile of the exact lot offered and match it to the profile your finished product was approved on.

Store in full, tightly closed, chemically compatible containers, cool, away from light and oxygen ingress, and use rapidly once opened. Oxidation and evaporative loss change the sensory profile before any analytical limit is exceeded, so confirm the storage condition, declared shelf life and re-analysis interval against the documentation issued for the exact lot supplied.
