Chocolate and compound coating troubleshooting
Real chocolate and compound coating fail for different reasons, because one is built on a polymorphic cocoa butter that must be tempered and the other is not. Pick the system you are running, then the symptom you can see. Every branch narrows the candidates and names what to check; none of them confirms a cause from appearance alone.
First: which fat system are you working with?
Cocoa butter is polymorphic and must be tempered. A substitute fat coating does not temper. The same symptom has different causes in each, so this question is asked before the symptom.
Choose the fat system, then the symptom. This page lists cause families to investigate — it never names one certain cause from a visible defect.
Use this when
- Chocolate or coating is too thick to flow, coat or mould properly.
- Viscosity is drifting during a run or thickening unexpectedly in the tank.
- Coating weight, tail-off or covering behaviour has changed.
- You see a white or grey film, dull surface, streaking or mottling and need to narrow whether it is fat or sugar related.
- You are deciding whether the lecithin or PGPR side of the emulsifier system is the relevant lever.
How this works
- 1. Declare the system first: cocoa-butter chocolate or compound coating. The rules are not interchangeable.
- 2. Pick the symptom you can observe.
- 3. Work the checks in order — temperature and moisture history before anything is added to the formulation.
- 4. Treat bloom as a hypothesis until process history, storage history and, where needed, laboratory confirmation support it.
- 5. Change one variable per trial against a control, and keep retained samples.
What this page does not determine
- It does not confirm bloom type. Appearance alone does not prove fat bloom, and it does not prove sugar bloom.
- It publishes no use level, no dose and no acid-to-base ratio. Every usable number comes from the supplier's own technical document for the exact grade you hold.
- It does not perform laboratory analysis, tempering measurement or rheology measurement. It narrows what to measure.
- It does not treat compound coating as chocolate. Where the systems differ, the difference is stated instead of averaged.
- It makes no shelf-life, freshness, mould-free-days or microbiological safety statement. Physical staling — starch retrogradation and moisture migration — is a different problem from microbial spoilage, and only the first one is in scope here.
- It makes no health, nutrition, clean-label, allergen or labelling claim. Declaration and allergen status are regulatory questions for your own specification and legal review.
- Confirm any change on a controlled bench or pilot trial against your own control batch before it reaches a production run.
